Our first white wine made exclusively from Cortese grapes from our vineyard. The sun-drenched grapes reached an incredible and unrepeatable alcohol content (13.5%), intense colours and aromas in 2021, the first year of consistent harvesting.
Still and with a fragrant bouquet, it should be enjoyed at a temperature of 8-10°C with hors d’oeuvres, fish, white meat and young cheese.
Paladin Cortese 2021 was awarded a score of 92 points by Luca Maroni.

Planting layout: 2.60 m x 0.90 m Each vine has plenty of space for greater well-being and better quality of the grapes produced at the expense of quantity. Exposure: sunny east-west Pruning: Guyot (tot. manual) Fertilisation: natural (manure) in autumn and secondary with foliar in spring Soil tillage: chopping (as Mother Nature intended) and inter-row tilling to avoid weeding Other tasks: chequering, chaffing, aeration etc. all carried out strictly by hand |
2021: frost in the spring period that reduced production, but then with high temperatures from mid-May, no precipitation in August and almost until the end of September 2022: Dry year also in the winter period, persistent heat with peaks of 36-38 °C. Grapes sometimes with very small berries. Fairly dry even in the ripening period. 2023: Persistent dryness until May-June, with a small frost at the beginning of April, then more regular rainfall in the summer period, hot and dry also in August – September. |

Pre-harvest: Pre-harvest, discarded grapes are used for other purposes (jam or vinegar, for own use). Harvest: Grapes harvested BY HAND and then further sorted. Harvesting during the coolest hours of the day, to avoid premature fermentation, and with harvesting directly into boxes or vats. IMMEDIATE transfer to the winery. Yield: 10,8 tonnes/ha in 2021, 6,7 tonnes/ha in 2022. Low production also in 2023, to favour quality! |

Pairing: all fish dishes, including first courses, but also starters, white meats, young cheese. To get the best out of what nature has given us, try to bring the ‘paladin cortese’ to 8-10°C. If cold from the refrigerator (generally 3 to 6 °C), taste and bouquet are not brought out at their best. This is true for many whites, but it is especially true for our cortese, which is not an industrial product. |

ABV: 13,54 % +/-0,15 (2021) – 11,81 % +/-0,09 (2022).
